Hi guys,

So I have this idea for a cook along. So once a fortnight or so I will look up an easy recipe on YouTube. Then whoever fancies having a go cooks it and posts pictures of what your creations ended up looking like. The idea is to have fun and not expect perfection.

Here is the first recipe. Your mission if you choose to accept it is to post pictures by Sunday 24th March 2024. That way it will encompass everyone’s paydays. It looks pretty simple and you probably already have some ingredients in your pantry. Good luck and tag others in. Thanks guys…

Right now I am cooking a leek, potato and garlic sauce pie. Everything made from scratch except the pastry (that was shop bought). I have made this recipe before so I know I love it but I tend to make it up every time I cook it. It’s not really a recipe. I got 2 large leeks and sliced them, then washed them in a colander. Fried them in a little oil and added salt and pepper. Right before they finished cooking I added fresh thyme leaves. Then I washed some potatoes and sliced them thickly. No need to peel, boiled them in water until almost cooked. Drained and cooled. Spray a pie dish or oil it. Place pastry in it and blind bake for 15 or so minutes. Let everything cool. Make garlic sauce. Put 50 grams butter in saucepan and melt. Add 2 teaspoons of minced garlic. Add 50 grams of plain flour. Get a whisk and move around the pan a bit. Let it cook a little without browning. Add milk a little at a time whisking after each addition. Keep going until it looks right but still a little thick. Add 150 mls (no need to measure) of thickened cream. Now assemble. Place leek in bottom of pie, potatoes on top and sauce on top of that. I used short crust pastry for the bottom and puff pastry for the top. Brush sides with beaten egg and place pastry top on. Cut hole in middle. Brush whole top with beaten egg and bake in 180 degree oven until golden brown. Not sure how long that will be yet. I have set my timer to 30 mins, check at 25 mins.
