Re: Saturday Soiree -- 24th January 2026

Oh @Ruby26 i have a track record of many kitchen mishaps, despite being considered a good cook by my friends 😅🤣. They are not mutually exclusive haha, so i hope that can be an encouragement for you also.

I have chronic fatigue whivh makes it especially hard to cook. I take a chair into the kitchen to sit on whilst at the stove, chop everything sitting down, etc. Everything i use has to be able to be dishwasher-safe for me to buy it now days too, not hand-washing because i cant sit down for that.

Pretty much this dish on Thursday had a fee hiccups you may be able to empathise and laugh with:

- needed to use cheese before expiry, hence the need to cook it

- went to shops on way home from outing to buy ingredients. But didnt have a recipe yet. But knew i needed onion so bought 3 onions. Knew i had spinach already.

- got home, found a recipe and read what ingredients. Realised i didnt have tomato. Also realised my cashews were over 2 years old. Very luckily my mum had tomato puree, and my cashews tasted ok still lol. Saved!

- then saw my cheese was 1kg and the recipe only needed 150g. Oh dear because i need to use all 1kg of cheese because its beyond the date by 2 days already. Ok, lets see how many multiples of the recipe i can make.

- spinach... well i only had about 3x the amount needed. And the onions i only had 3x also. The tomato puree i estimated at 4x. But the cheese... 6.6x recipe amount. Oh well, make do with what i have!

- spices... hmm i dont like whole spices because then i get a mouthful crunch on one 🥴. So ill use ground spices. But i have no conversion knowledge of how much to use 🤣 so i just gestimate the amounts and proportion to each other. Except cumin, i dont like cumin, so it just has a pinch only.

- onion. Cant be bothered to finely chop. Rouch chop will be fine. I dont care. Usually i do suoer fine chop with a pull-cord chopper but cant be bothered for one onion only (which later turned into all 3 didnt it!)

- hmm need to blend cashews and spinach... only have a hand pull-cord chopper. Ok that will have to make do. Not quite puree but good enough lol.

- oh, i used my saute pan like the recipe said. But.... then i made it a 3-4x batch and so it was overflowing and making it really hard to not get messy when stirring to prevent sticking and burning. But no way im making an extra dirty dish by getting a saucepan!

- ok cooking all done. Phew. Then the rice. First rice - weevles ewwwyyyy. Second rice, never gooded long grain basmati before so guestimate water level and time. Oopps not enough water, need to do some more after but all good got there eventually.

And tada! A successful meal despite the unpreparedness and chaos of not having all the ingredients in proper quantities lol.

@tyme my partner cooks me dinner sometimes, the rest of the time I get microwave meals or just have mushrooms and cheese on toast.

Love it! Why not? @Shaz51 . I've never heard of mushrooms and cheese on toast. Do you just slice raw mushrooms and put it on toast with cheese? Or do you cook the mushrooms first? (because THAT's cooking!)

Although, i love banana and cheese on toast! You slice up banana, put it on bread then cheese on top and toast it! @Shaz51 @AlwaysMyself @Ruby26

Re: Saturday Soiree -- 24th January 2026

That is so nice of your sister @tyme 🥰😍 what a good arrangement.

I have also lived off frozen premade microwave meals @Ruby26 . But i find very few options that meet both my health dietary needs and my palate (esp because i don't eat chilli, and also dislike "lumps" of meat like steaks). So home-modified recipes are what i can do to meet my food needs, but very challenging due to being mostly unable to cook for myself most of the time

Cheese snack sandwiches are so good 🥰. Wish i could have them without the health concerns i have hahaha. But they are a very-occasional treat i can have instead 😍

Do you get meals delivered to you @AlwaysMyself ?

Re: Saturday Soiree -- 24th January 2026

@AlwaysMyself I have POTS so I can relate a lot to struggling to stand while cooking. My kitchen isn't designed in a way that makes it practical to move around or sit in a chair.

I literally decide what I'm going to eat based on the question: what is going to expire first? I hate food wastage, have a low income and executive function issues. I buy the long-life milk, so I always have fresh milk, but even then, I have to remember to drink it once it has been opened.

Making things double cheesy makes it taste better. As long as you're not serving someone with intolerance to dairy, I think you can always use a bit of extra cheese.

After setting fire to the kitchen trying to cook garlic and fennel together, I've been put off being too creative with spices lol. I only really use spices on pita bread and garlic bread.

The last time I tried to finely chop an onion, it took me 3 hours, and my eyes were burning the whole time. I don't think I can ever face another onion after that.

I cheat with rice and just buy the pre-made packets.

@tyme thank you. I put raw mushrooms and cheese on the toast, then put the toast in the microwave. The mushrooms do cook quite well in the microwave, but any overcooking and they turn into mushroom juice.

Re: Saturday Soiree -- 24th January 2026

@tyme that's a really interesting idea, I never would have thought of putting banana and cheese together. If I have banana on toast, I put honey or maple syrup on top.

Re: Saturday Soiree -- 24th January 2026

Oh! You put it in the microwave! So it's like a mushroom cheesy?

Yes, I've 'cooked' mushrooms in the microwave before. Slice them up, drizzle some olive oil, add a pinch of salt, and voila!

Cheat 'meals', eh? @Ruby26

And setting fire to the kitchen doesn't sound too good lol.

Hi friends!!

I accidentally broke one of the compartments inside the fridge this morning so am waiting to hear back from my building agent/manager after they come back tomorrow. So yay for that I guess lmao…cause guess it means I’ll have to pay to get it fixed! Or… if they’re unable to get it fixed otherwise lol

my psych appointment is coming up next Monday on the 2nd Feb & this coming Saturday I’ll be attending the first ever workshop with my support worker for one of the inclusive filmmaking programs that I’ve initially signed up for! 🙂
