What has been your highlight today, no matter how big or small? Come share 🫶

What has been your highlight today, no matter how big or small? Come share 🫶

Hi everyone! This is my first ever forum post so do hope it lands where it’s meant to 🤣

Most days, I like to find a highlight 😊. Usually, that means during a walk with my dog, I try to spot something different, something cool or something that brings me some happiness. Whether it’s something big or small, it doesn’t matter. A highlight can be anything!

I love taking photos and would really like to share and see what you've come across. Something that made you smile, sparked your interest, or simply caught your eye. For me, it’s all the little things that count on the hard days.

To start, I’d like to share these beautiful birds I came across today. They like to appear like branches of a tree or the tree itself. They are called Tawny Frogmouth’s. Has anyone else seen these types of birds? My pics below -(hopefully not too small to see two in the tree on the left pic).

What have you seen today? ☀️💛🙏

What a beautiful spot to drink your coffee. 😊 I bet you miss that, is it too far to visit every now and then, where you live now?

@Rosepetal96

I love lasagna, do you have any good recipes that are fairly easy to follow?

I watched Sleepless in Seattle yesterday. It’s such an old movie, but a real classic. It’s on Netflix at the moment with Tom Hanks, he looks so young in that one.

I’m currently following Australian Idol, so I'll be watching that tonight. I think they’ve reached the top 30 now. One of my favourite parts is when they start the group rounds, where they have to sing together. It’s always interesting because everyone has so different voices, and they have to learn how to blend and work with each other. I’m curious to see how that goes.😊

My day today was a bit of a mix. I don’t know why, but I felt socially awkward for some reason. I felt like everyone has it together, and I'm lost-kind of moment. I get moments like that, I think I’m just feeling extra anxious today. But I’m really happy to be home now..!

Oh dear, was it me that used the word complex? If it was I just meant complicated.

@SaltwaterSoul @Chasingsunsets @Appleblossom @Ruby26

Hi Apple, lovely to hear that you have found friends at Church and you are comfortable there. For myself I have lost faith in organised religion but I still believe strongly in God. God and I have a great relationship so I have faith that I will get where I need to go after life.

I have a few highlights today. I went to my first uni lecture and I understand everything, I got an answer from the science office about doing maths as broadening units, I organised a locker at uni and I printed out my practice math questions and answered the first ones. Looking forward to my mental health support group tonight.

Hey @SaltwaterSoul 👋

I usually follow the recipe on the bottle of the bechemel sauce by dolmio in all honesty, it usually works quite well in terms of cook times, layering and oven temperature, I usually double the layers of lasagna sheets as it seems wasteful to leave half the sheets because of my petite tray, and it makes it more bulky.

Oooh, I used to watch Australian Idol, but tend to procrastinate everything now and waste my time doom scrolling when I could be watching something, so I will try to do that tonight...

In terms of feeling a little awkward, I completely understand you, I must be suffering some sort of imposter syndrome at work and seem to have lost momentum with things I'd usually find a breeze...

So that's only piled on the anxiety, I am sure as relieved to be back at home. However I remained composed today and didn't break down, so that's an achievement

Bechamel sauce is so easy to make from scratch. Just put a tablespoon of plain flour and a tablespoon of real butter in a saucepan. Whisk together over heat. Cook out for a minute or two to cook out the flavour of the flour. At this point it looks like a thick paste. Then just add cold milk a little at a time, continuing to whisk until you get the consistency you want. There is no real recipe, you just need equal parts flour and butter. If you want a bigger quantity of sauce increase your flour and butter.

Then if you want cheese sauce, take it off the heat and throw in grated cheese while sauce is still hot. Whisk

@SaltwaterSoul

My hubby makes a great lasagna. He steeps the milk that he uses to make the bechamel sauce (above) with one grated onion, 2 cloves and 3 bay leaves, garlic if you like it crushed (bring nearly to boil and leave sit for 30 mins) pass through sieve before making sauce. Doesn’t need to be cold.

Then make a tomato based sauce to mix with beef mince, cook together

In a tray put layer of tomato beef

layer of pasta sheets (we use the fresh coles sheets)

layer of bechamel

layer of grated cheese with Parmesan sprinkled on top

repeat layers and finish with cheese layer.

Cook in 180 degrees celcius oven until brown and hot in middle(1hour)

That's amazing, how was your first uni lecture? Good on you for showing up. Do you have many lectures each week? 😊

Today’s highlight was receiving a gift from a friend I’ve slowly gotten to know over the past year.
She has been travelling overseas, and to my surprise she had a gift for me. Inside the bag were a few different small gifts, I couldn't believe it, and in that moment I felt a wave of happiness. What stood out most to me was not the gift itself, but the kindness and thought behind it, that she thought of me while she was away...

I’ve had a bit of a meh day, feeling slightly off and quite anxious, so this small act of care really shifted my mood for a bit. It reminded me how meaningful simple gestures can be, especially when they arrive unexpectedly. I really wish you all a good evening..😊

Oh @SaltwaterSoul

How lovely that your friend thought of you and put thought into getting you meaningful gifts. That is so nice and sounds like it was unexpected. Those are the best gifts to give. She probably felt really good that it meant so much to you. What a wonderful way to lift your mood if only for a little bit.

Today was my first lecture and it went really well. I have 3 lectures per week and one prac class but the prac classes don’t start till next week.

I had a really successful day today and I feel really good about it.

Thanks for asking.

I am going to take a leaf out of your book on Wednesday and take a walk on a path by the ocean. Hopefully it won’t be too hot first thing in the morning.

Hugs Dont worry about Complex. Its good we can all express ourselves @Oaktree Its great you enjoyed today at uni, and are alright with the level of maths. It makes a huge difference, cos words can be easier to research but with Math, you gotta understand First Principals, at least that was what my teacher from school loved saying. lol. I remember back in the 80s, at uni, helping another mature age lady with the maths portion when we did Earth science. She gave me rides in her porsche as thanks. We all have different strengths. I dont regret any of my study, but I am a bit more fussy these days, been at it a while.

Your lasagne is pretty much my style. Taught myself to make bechamel sauce back the year before I started uni, whem I just did General Mathematics at night school.

Yay! Maths and a good french sauce!

Thank you both for sharing your ideas for making lasagna. I feel inspired to try it at some point this week. 😊

@Rosepetal96

I just finished watching idol. I thought the group round was on today, but it seems it’s actually tomorrow. It must be so nerve-wracking standing in front of everyone trying to do your best, especially when some forget the lyrics, and the judges are so strict. I really felt for them, it can't be easy.

I know for myself that I hate speaking in front of people, especially when all the eyes are on me.

It feels so overwhelming sometimes, and I can go completely blank or freeze up or even use words I’ve never used before. It’s actually quite funny at times..

I noticed it today during a conversation, I said a few words I don’t usually use at all. Later on, I laughed to myself and thought, jeez, where did those words even come from? 😅

I'm so glad you seemed to overcome some challenges today, it's important to celebrate the wins as well.
