Hello @Oaktree you can buy organic produce to get away from zero nutrient GMO. A box costs me $65/week roughly. You could get it cheaper going to a farmers market. The GMO foods make you buy even more than you want because theres zero nutrients in it which makes you crave more and more.
I have just about every herb and spice on standby as well as pantry staples so I can google recipes starting with what I have in my crisper. Googling allows me to be flexible with what I allready have. My favorite online recipes come from Love and Lemons, Fork in the Road etc but you could google others. Just type in your search engine: "cauliflower and beans recipes" for example and it will spit out lots of recipes with those ingredients.
You will be accustomed to many of the sites organised by dieticians and chefs. Many recipes online have modifications in the recipes so you can substitute for things not in your fridge or pantry. I cook very simply.
I will also have fallback recipes like savoury mince, curry, spaghetti bolognaise, stews (you can throw anything in a stew) and soups!
I eat organic meat but can only afford mince. I pay my monthly supply off over a month using Paypal "Pay in 4" from a regenerative farm. I have a fistful of meat which is like $3.75 a serve. Much cheaper than other cuts of meat even store bought.
