Munchies

Munchies

Thought I would start a thread that can be used to chat or talk about food issues, hates or loves. I do comfort eat but also I know its the great human connecting ground, because we all do need to eat, no matter what.

I wondered if some on the forum might relate to this more than the beergarden or the night shift. Hi @Former-Member I was thinking of you but anyone else who is interested may just pop in.

Just had a mandarin, its sweet but lighter flavour than an orange is sometimes just what i need.

Feel free to chat, though.

Cheers

Apple

Re: Munchies

@TAB, we've got a rainwater tank, and live in an area that has very low air pollution, so I'm pretty confident that it's non toxic. 🙂

Ingredients

Dry Ingredients
  • 1/2 cup pork rinds measure after grinding
  • 1 1/2 tablespoons whole psyllium husks
  • 4 tablespoons vanilla ice cream
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
Wet Ingredients
  • 2 tablespoons sour cream
  • 1 large egg
  • 1/3 cup canned pumpkin
  • 1/4 tablespoon maple syrup
  • 2/3 cup egg whites, or carton egg whites
  • 1/2 eyedropper Stevia drops
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon olive oil or cooking spray for pan

Instructions

  1. Combine dry ingredients stir to mix well. Add wet ingredients into a separate bowl and stir until smooth. Add wet ingredients into dry. Stir with a spoon or spatula until evenly mixed. If batter thickens too much, thin with a tablespoon of egg whites.
  2. Heat nonstick skillet over medium high heat. Brush with olive or use cooking spray. Place one heaping kitchen tablespoon of batter per pancake, into the pan. Gently tap into the batter to spread it out to about 2 1/2-inches. Batter will spread to about 3-inches. Cook until bottom is set and golden (about a minute), then flip and finish on the second side (about another minute). Cook 2-3 at a time and don't overcrowd.
  3. Remove and butter pancakes.

Re: Munchies

Thank you @Faith-and-Hope it gives me a few ideas for next time.

I added bacon to mine, it was not sweet, but the psyllium is a tricky ingredient. When it over thickened as it is prone to do, I thinned it with water instead of eggwhites. The pancakes just fell apart and took ages - 25 mins to cook ie get a consistency like scrambled egg. Also the recipe I tried had cottage cheese as prime ingredient....

bloomin keto .. always up for a challenge .. I guess.
