Secret Recipe Curried Egg Toast @Phoenix_Rising @Faith-and-Hope
There's a story behind this: Years ago I worked in a cafe that had the most delicious curried egg sandwiches, but the recipe was a secret and no one was allowed in the kitchen when the owner was making them. If we ran out, that was it, no more that day.
She once told me it had mayo in the mix, but that was probably to make me stop asking, because no mayo I've ever tried created that taste and texture sensation.
Anyway, last night for midnight snack (we all do that don't we??? 🙂 ) I put some ricotta cheese on my buttered toast, then decided I'd double up on the protein and spread some freshly made curried egg on top of it.
I'm pretty sure this is the secret recipe from my cafe working days! Had it again for breakfast this morning and it was still as yummy. So,
Not So Secret Curried Egg Toast Recipe
Ingredients:
6 eggs (boiled until yolks are just set and peeled)
50gm or so butter (butter is better for flavour, margarine will work)
2 flat teaspoons Keen's Curry Powder
1/4 teaspoon salt (edited to reduce the salt - do check for taste for yourself 🙂 )
Buttered Toast
1 tablespoon or so of Smooth Ricotta Cheese
Boil eggs, cool enough to peel. Put still hot eggs, butter, curry powder and salt into a basin or bowl big enough to use your potato masher in. Mash while still hot to cook the curry powder. When well mashed, flatten the egg mixture down in the bowl and leave it to cool a bit.
Make your toast, butter it, spread the Ricotta Cheese on next, then spread a goodly amount of the curried egg mixture over that. Delicious with a cup of tea!
I like to have the first serving of it on toast while it's still warm. Store the rest in the fridge until next snack time. 🙂
