Night Shift

Night Shift

Since I am awake at 4am I thought I'd start this thread for those of us who have trouble sleeping and might find it helpful to have a place to go to chat. Whatever gets you through the night is alright.

To get the ball rolling, I'll just say that I enjoyed being part of the Topic Tuesday discussion tonight. I wish it was possible for these events to be weekly rather than monthly. Either way, thanks SANE and all the people I've met on here over recent months.

Edited June 2016 and February 2017: Night Shift is now open 24 hours a day. To join in, just click through to the last page of the thread at the top right of this post to get to the latest message.

Edited April 2017 and June 2017: For the sake of better communications between members here, I am adding that this thread is meant to be a caring, kind and gentle place of sharing. Humour is welcome, as long as its not unkindly directed towards other members. Hope your time in this chat thread is rewarding.

Re: Night Shift

Come to think of it, why I feel so good. Had the best-ever massage yesterday and I think it has helped dislodge a 51 year old communication blockage, either that or I am going manic....Keep going everyone. I find you all inspiring!!!

Re: Night Shift

Want a good recipe @plasmo ?

I buy carrot cake sometimes when I want to stop out somewhere for a re-charge, but I have the best-ever recipe to make it at home. It's got so much good stuff in it, and us low sugar, that you can have it in place of a meal - guilt-free.

Re: Night Shift

sounds good @Faith-and-Hope i tend to put less sugar in things. there may be a recipe thread or something you can post it in. no hurry though

@plasmo

I had it right here on my iPad from having sent it to someone else last week -

Dont worry about the icing and topping if you don't want to ...... Greek people I know just dust the top of most cakes with a thin layer of icing sugar. It gives a sweet note without the extra energy of icing.

CARROT CAKE

2 cups grated Carrot
3/4 cup chopped Walnuts
3/4 cup Sultanas
1 cup Raw Sugar
2 beaten Eggs
1 + 1/3 cups Wholemeal SR
Flour
1 tspn Baking Powder
1 tspn Bicarb Soda
1/2 cup Olive Oil
1 tspn Mixed Spice

Sift Flour, Bicarb Soda, Baking Powder into a bowl. Add Carrot, Walnut, Sultanas, Sugar, Eggs and Oil and stir to combine.

Pour into lightly oiled tin.

Cook 1 hour @ 180degC.

Ice with:
Cream Cheese
hand whisked together with
1 Tbspn Lemon Juice
Lemon Rind and
Icing Sugar to combine.

Top with:
Pepitas
chopped dried Apricots
Sunflower Seeds
shredded Coconut
chopped Walnuts.
