it just seemed to go quiet, ok its quiet in general today. @Taali
course starts lunchtime wed, so will have time to get head around it after all. got accom bookings. still have to sort a dentist appt this week and endocrinologist next week @Meowmy @StuF

Hello @TAB making bacon pea mac n cheese with no bacon and no cheese. The bacon is made of an eggplant brushed in a sauce and baked until its crisp and the cheese is made of blended potatoes, carrots, herbs and almond milk. I cant have normal pasta due to diabetes so have konjac pasta instead which is low carb. I've never had this recipe before so giving it a go today
