Hot Chocolate Anyone ?

Hot Chocolate Anyone ?

Hi All

There is a thread operating on the Lived Experience Forum under Night Shift where members who are having trouble sleeping for any reason give a bit of a shout-out, to see if there is anyone else sleepless and looking for company. It's been such a great thing, I thought I would start one over here too.

I have had the odd few nights where I have woken up on and off, and my kids have been having a bit of trouble some nights too, depending on what has happened during the day.

Being a carer can be lonely too, so if you are making an after-midnight cup of something hot, and wonder who else might be doing that too, maybe have a look-in here and see if anyone else is about.

Re: Hot Chocolate Anyone ?

I cooked Home-made Sausage Rolls, for my Client on Wednesday (1st time) - He grated a bit of carrot, to go into it.

Yesterday (Friday) I cooked Ricotta & Spinach Rolls, for same client (1st time for that too) - using Puff pastry. Just as I did for the Sausage rolls, on Wednesday.

He did not help with this one.

Hi @Icare20 I'm only just home from having a massage - my back & neck were so sore & stiff today.

How are you?

Evening @Former-Member @Adge @Appleblossom @Smc @outlander @Icare20 ..... have I missed anybody ?

Will look up a recipe for you @Former-Member. What I usually do though is adapt the basic muffin recipe -

  • 2 cups self-raising flour
  • 1 egg beaten
  • 1/4 cup oil
  • 1 cup milk

Add a pinch of salt for savoury or half a cup of sugar for sweet.

Then I start adding other ingredients, and what you can do at this stage is divide the batter into different bowls and add different ingredients to each, creating a mixed batch of muffins.

I am guessing that you prefer exact recipes @Former-Member ?

I used to go with a recipe like @Faith-and-Hope

and found fruit the best to add ... not too fussy ... more on moist side ... maybe if it comes around to grandkids I will get a chokky batch too ...

Thanks @Faith-and-Hope

I usually start with an exact recipe and when familiar with it then feel I can modify it. Probably as I won't be adding things with high moisture content I might be right.

Re: Hot Chocolate Anyone ?

  • 1½ cup flour
  • 1 Tbsp baking powder
  • ½ tsp salt
  • 1 Tbsp dry Oregano or Marjoram
  • Pepper to taste
  • 1 cup milk
  • 1 egg - beaten
  • ¼ cup olive oil
  • ¼ cup pitted Kalamata olives
  • ¼ cup sliced sun- dried tomatoes
  • 1 cup cheese, grated

Divide into "wet mix" and "dry mix" stir each bowl to combine the ingredients. Tip the dry ingredients into the wet ingredients, and stir with a wooden spoon until only just combined.

Turn out into oiled muffin tins and bake towards the top of the oven to assist with their rising, heating the oven to 180 deg, then turning down to 150 deg once the muffins have been placed inside.

Cook for 20 - 25 mins, but keep an eye on them as some cheeses brown faster, and tips of tomatoes might blacken a bit. If they appear to be scorching in this way, turn the oven off and let then cook for an extra 5 - 10 mins in the residual heat, covering loosely with foil if desired.
