I don't think I've met a cheese that I haven't liked... except perhaps the processed cheddar that was in everyone's fridge when we were kids. 😛

One of our friends brought a lovely wheel of Stilton along to our combined 50th birthday party earlier this year. We got to take home the half that was left at the end of the day and enjoy it.

Currently there's only tasty in the fridge, but I do commit the "crime" of freezing cheese when I see it at a cheap price. Despite advice to the contrary, we've had no hassles with it thawing out acceptably. 😄 So there's parmesan, mascarpone, brie and camembert in the freezer... plus a small amount of "accidental" ricotta. I was trying to see if I could make condensed milk from buttermilk left after butter making, but because the buttermilk is high in acid it turned into sweetened curds instead. Actually tastes OK, but I didn't have time to use it when it happened, so I froze it to experiment with a recipe later.
