What's For Dinner ?

What's For Dinner ?

Hi all ... me again .... 😊

I know there are many days when trying to work our what to provide my tribe for dinner is in the too-hard basket, but it's my problem anyway ....

My friend @Former-Member is great at quick and easy meals .... hoping she'll post her Tawney Soup recipe here .... but the one I liked this week was baked beans on toast with melted cheese on top ... even found an image for it ....

Howzat ??

What's your favourite go-to recipe on a burn-out night when there are mouths to feed and not much energy left to get it together ?

My mum used to just boil some eggs .... buttered toast and some lettuce .... that was enough.

Re: What's For Dinner ?

We're being major carnivores here. I had a duck and a chunk of roasting beef in the fridge which I was expecting to have cooked by now, but we've been out and getting home too late to do them. If I leave them any longer they'll be too *ahem "well hung", so both are cooking tonight. The beef is wrapped and resting while the vegs bake (parsnip, sweet potato and onion), and the duck is poaching with assorted herbs. It's at the point where the meat's starting to fall off the bones, so I think it's done... but I'll give it just a bit longer on low heat. Duck has a habit of turning out tough if its cooked too fast.

Roasted a small chunk of pork, plus parsnips, sweet potatoes and onions... which is, ironically, about what we were eating last time I posted here. 😄 Except that it's pig this time instead of cow...

Made a bacon and greens "bread" to go with it. Huge amount of chopped up greens, including fennel, parsley, garlic chives, silverbeet and chickweed; plus finely sliced bacon. Chop up greens, lightly cook in butter along with bacon, add a cup of SR flour, two eggs, some milk, salt&pepper, some cheese, some oatbran. Spread out in a lined tray and bake until golden and yummy.
