What's For Dinner ?

Our dinner has been mostly salads lately. Last nights was a Chickpea Salad with Coriander, Sunblushed Tomatoes and Halloumi. It was supposed to look like this but didn’t quite look like it 😊 it was still nice though

Otherwise my son and his girlfriend are into making papaya salad which has been yummy and a Thai green mango salad is delicious too.

Tonight is a simple Sandwich Night in the Moongal household.
For Mrs Moongal it's ham and mild english mustard sandwich (poor piggies) 🐷
and for me it is free range egg, mayo and lettuce on continental bread. 🐔

Followed by... a healthily small portion of vanilla, chocolate and caramel swirl ice cream (first time to try). 😎

I'm having Spinach Ravioli with curried Chickpeas & vegetables.

Plus some Vegetable sping rolls, which are very moorish (I can't stop at 1 or 2)....

I am falling in a heap after work and need to get up and moving. I'm aiming at Mediterranean baked sweet potatoes but wish they'd just cook themselves
