It’s called best ever chocolate cake and it’s a very rich and moist cake. My kids love it. I might post the recipe for you later if I get time. I have just made the batter and I am waiting for the oven to heat up to pop it in.

I haven’t called my son for his birthday yet as he works hard and usually gets up for work super early. Monday’s are his day off so I am letting him sleep in. Will call him after 10am.

hope it improves soon @hanami , relaxing here at the moment , had a very restless night sleep last night and we finally got up at 4am to have a cuppa , so i think a sleep might be in order after

I love banana cake but noone else around here really eats it. As a result I have stopped making it.

Best Ever Chocolate Cake

90g cocoa powder

375ml boiling water

185g butter

440g caster sugar

2 tablespoons raspberry jam

3 eggs

300g self raising flour

Combine cocoa powder and water, mix to dissolve and allow to cool

Cream butter, sugar and jam until light and fluffy. Beat in eggs one at a time adding a little of the flour with each egg. Fold in remaining flour and cocoa mixture alternately.

Spoon mixture into two greased and lined 20cm cake tins and bake at 180 degrees celcius for 35 minutes or until cooked. Check with a skewer

Chocolate Mocha Icing

125g butter

330g icing sugar

1 1/2 tablespoons of cocoa powder

2 teaspoons instant coffee

2 tablespoons milk

To make icing, place butter in a small mixing bowl. Beat until creamy. Add icing sugar a little at a time, beating well after after each addition,

Combine cocoa powder and coffee and mix to a smooth paste with milk then whisk into icing.

Allow cake to cool then ice with mixture. Put icing between the cakes and all over the outside.
